71 anni, proprietario del Salumificio Gianferrari – I salumi di Canossa, a Ciano Val d’Enza.

«Io amo il territorio in cui vivo e lavoro, mi piace valorizzarlo, anche giocando con i nomi. Per esempio, il nostro culatello l’ho battezzato Canossello. Il fiocco, invece, Rossenello, in omaggio al Castello di Rossena, a pochi chilometri da qui. È importante sottolineare il nome di Canossa, è un patrimonio di cui beneficiamo tutti, chi produce il vino, chi produce il formaggio… Facciamo tanto gli europei, ma poi ci presentiamo sempre come fossimo dei feudi e questa divisione ci rovina perché siamo meno competitivi.
Bisogna fare delle scelte nella vita, la nostra è stata quella di puntare alla qualità. Lavoriamo solo carni di maiale scelte, prese da allevamenti selezionati. Il nostro maiale preferito è il nostrano White Large incrociato con il Duroc, che è una razza più robusta: rende le carni più fragranti, ma anche più facili da portare a una stagionatura lunga e naturale come la facciamo noi, che non usiamo mai conservanti.
Ora in azienda siamo io, mia moglie e i miei figli Mirco e Luisella. Il fondatore però è stato mio padre Ferdinando. Era falegname, ma aveva un amico con un negozio di alimentari che lo ha incoraggiato a lanciarsi sui salumi. Era il 1951. Ormai siamo alla terza generazione. Siamo cresciuti tanto, ma ora basta così. Vogliamo restare artigianali. A lavorare qua si fanno tante ore, ma dopo c’è soddisfazione. Io ci ho messo del tempo a seminare, però poi la soddisfazione paga di più forse che avere subito un guadagno immediato».

    “I love the area in which I live and work and like to bring out the best it has to offer, also by playing around with names. For example, I have renamed our culatello ‘Canossello’, after the Canossa dynasty, and I have renamed our fiocco ‘Rossenello’, in honour of the Castle of Rossena, which lies just a few kilometres away. It is important to underline that the name of Canossa is a huge part of our heritage that benefits us all – including those who produce wine, cheese and others. Although we like to think we are European, our entire system is almost feudal, and this separation is destroying us because it makes us less competitive.
    In life, you need to make decisions and we have decided to focus on quality. We use only select cuts of meat from selected pig farmers. Our favourite breed is the local White Large, crossbred with the more robust Duroc breed: the resulting meat is more fragrant and also easier to age for a long time using natural methods, without any preservatives. The company is now made up of myself, my wife and my children Mirco and Luisella, but was actually founded by my father, Ferdinando. He was a carpenter but a friend of his had a grocery store, and he encouraged him to go into the meat curing business. That was way back in 1951: we are now already in the third generation. We have grown a great deal but that’s as far as we want to go: we want to continue making our products the traditional way. The working hours are long but we are awarded by satisfaction. It has taken me a long time to grow, but the satisfaction we get is probably worth more than getting an immediate gain”.
