«Per i bambini io sono “coca Manu”. Mi conoscono tutti benissimo e io conosco ognuno di loro. Sono cuoca da 22 anni e sono sempre stata al Rodari. Non vorrei mai lavorare in un ristorante perché mi sembra un mondo dove non c’è un vero scambio: si viene, si mangia e arrivederci buonasera. Qui al nido di Reggio Children, invece, la cucina è il cuore di mille attività, proprio come in una casa normale, che si finisce che si sta sempre tutti lì. Questo è un mondo particolare, molto impegnativo, ma che ti dà anche tanto e tu dai tanto ai bambini e ai loro genitori. Insieme si mettono le basi perché i piccoli imparino a mangiare in modo sano. Per esempio, il brodo vegetale: da noi a Reggio si fa quello di gallina, “perché è più buono”. Mica vero. Quando i genitori hanno assaggiato il mio brodo vegetale si sono ricreduti, perché io uso tante verdure in modo diverso e il brodo diventa buonissimo. Facciamo un tipo di cucina in cui si sente il territorio. Usiamo moltissimo parmigiano reggiano. Cerchiamo di dare la quantità giusta, anche se per la verità un po’ abbondiamo. Siamo a Reggio in fondo! Anche la carne viene da allevamenti della zona di Reggiolo. Un altro esempio è la torta verde, che s’ispira all’erbazzone: non è fatta con il lardo, ma con la ricotta e quindi è più leggera. O ancora, come dolce facciamo la torta di riso, tipica reggiana. Però il nostro liquore Sassolino mica ce lo mettiamo. Ci mancherebbe!».

    «The children call me “coca Manu”. They all know me very well and I know them. I’ve been a chef for 22 years and I’ve always worked at Rodari. I’d never like to work in a restaurant because to me it seems like a place without true exchange: you come, you eat and thanks a lot, bye. Here at the Reggio Children nursery, the kitchen is a hub of lots of activities, just like in a normal house, where everyone always aggregates. This is a unique environment, very demanding but extremely rewarding, you give a lot, as do children and their parents. Together we’re forging the foundations so that small children can learn how to eat healthily. For example, vegetable broth: at Reggio we make chicken broth, “because it’s more delicious”. That’s just not true. When parents taste my vegetable broth they change their mind, because I use lots of vegetables in different ways and the broth is delicious. The local land is palpable in all our dishes. We use a lot of Parmigiano Reggiano. We try to give the right amount but to tell you the truth we often err slightly on the side of abundance. After all, we’re in Reggio! Our meat is also sourced from local Reggiolo farms. Another example is our ‘torta verde’, inspired by the local erbazzone vegetable pie: instead of lard we use ricotta so that it’s lighter. Or one of our puddings, rice cake, typically Reggio. Without Sassolino liquor mind you, I don’t think that would be a good idea! ».
